Thaw in refrigerator overnight. Pork tenderloins will cook quickly and can be prepared simply as is, dry rubbed or seasoned with marinades. You can also slice into medallions and saute.

To roast: Preheat oven to 350°F. After seasoning to taste, sear the tenderloin on all sides in a hot skillet with a small amount of olive oil. Move tenderloin into a shallow pan. Do not add liquid; do not cover. Place in oven for approximately 20 minutes or until the center of tenderloin temperature is 145°F (medium rare) or 160°F (medium). Remove from heat and cover for 10 minutes. When cooking pork, you want a slight pink color.

Each individually packaged tenderloin weighs approximately 1.0 lb, and serves 3-4.
